Chicken Enchiladas
Ingredients
- 2 large chicken breasts
- 1 cup chopped onion
- 1 clove garlic
- 2 Tbsp butter
- 2 cups canned tomatoes
- 18-oz can tomato sauce
- 1/4 cup green chiles
- 1 tsp sugar
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp oregano
- 1/2 tsp basil
- 12 tortillas
- 2 1/2 cups monterrey jack cheese
- 3/4 cup sour cream
Directions
- Cook onion and garlic in butter until tender. Add next 8 ingredients and simmer covered for 20 minutes. Dip tortillas in sauce to moisten. Place chicken and cheese in tortillas and roll. Place seam side down in 9x13 dish. Blend Sour Cream into remaining sauce and pour over tortillas. Sprinkle w/cheese. Bake 350° 40 minutes.
